20 fighter stalwart defender
legendary dreadnought, twist sense weakness/legendary shield mastery

DPS set:
Max DPS for EH or easier. Prioritize DPS stuff over survivability stuff. Try to optimize for easy swapping into EE set/tanking set.

The more I look at the numbers, the more convinced I am that T3 Nightmare + T3 Alc Tower is ahead of eAGA in most situations for a dps-defender build (which matches anecdotal experience). Hard to figure out real numbers for S&B though, since I haven't seen anyone do Vanshilar-level work on S&B attack speed. Harder yet to compare to 2-handed. I am not going to realistically acquire eSOS (which I would use for DPS if I had it), if you think there is a reasonably attainable 2-hander that's better DPS than eAGA let me know.

Missing:
+15 intim (wish you could slot +skill, at ~55 without)
30% hamp (sucks, but would rather have grasps)

Ring of the Stalker is kind of weak, only really giving Manslayer and 2 slots, but can't find anything tasty to replace it with.

Because while the build can tank when needed, it is not a "tank" and this is not a tanking set.

I don't like the Diversion - it's usually better for me to have aggro than other people - but for +2 profane str and +10 seeker I'll deal.

I'm not sure where to start with this gear set. 

I like Epic Elite Bastion over the Alchem Shield.  That shield is more about DPS than it is about Tanking or defensive.
I'd go with EE Treads over surefooted boots.
I'd go with Tier 3 Spare hand over the GS Belt. 
White armor for tanking.  Black is all DPS. 
I see no healing amp items on this build at all.  That's unsat for any heavy melee build, but doubly or triply so for a tank.  Especially when using Nightmare.  My tank gets back 6 HP per swing off the vamprism.  With haste and haste boost on, he barely ever needs a heal, except in raids or large mob EE content.  I can't imagine having a melee build of any sort that doesn't at least try to squeeze in one 20 or 30% amp item.  Get some bracers or something (the steady handed attack bonus doesnt stack anyways) or dump that stalker ring (most of what it does is redundant or useless on a tanky fighter) for a ToD ring with 20% amp on it. 

The ghost waking cloak is crap for this build.  You can slot resistance.  You already have ghostly.  The charisma is worthless.  I'd go jeweled cloak for slots and the spell absorption and the resists or an HP GS cloak that got moved from the belt.

Also, did I miss the Intimidate gear?  If you ask for a defender gear set, that's typically a tank build.  You are planning to hold aggro solely on threat alone?

That gear list looks like a Kensai/barb gear set (minus the shield/nightmare and the heavy armor vs. medium).  Not a defender/tank gear set.  There's no point in being in defender if you are just going to play it like a barb/kensai.  It's taking too much DPS off the table and not putting anything back on from a survivablilty standpoint.  You are not on the left side of the road or the right side.  You are in the middle.  Do we really need Mr. Myagi to tell us where that leads?

You are as good at reading posts as ever, Asheras. Also good at noticing posts are a month old. Also, I can tell you know a lot about S&B builds.

If you want to see my evolved EE set and tanking set, they've been posted to the DDO forum.

Wouldn't it be glorious if there wasn't - 20 threat ?
Something like subtle backstabbing which could be turned on/off depending on situation.
