The two Tank PrE's in the game are currently DoS for Paladin and Stalwart for Fighter. I believe that it is currently impossible to take them both at the same time because they both need [class skill boost] for AC and you can only get one class-related AC boost.
That would pretty much eliminate Ftr 12/Pal 6 or Pal 12/Ftr 6 from a valid Tank build, except that Pal 6 also has Divine Righteousness. 3+Cha Mod number of Turn Undeads that you can turn into +100% sacred Hate generation is very nice and since that doesn't stack with the DoS PrE anyway, I thought that Ftr 12/Pal 6/Mnk 2 might be an interesting tank build. It will end up tanking exactly Jack and Shit until it hits 20, but there really isn't anything *to* tank until you hit VoD/ToD/epic raids anyway, so it's all good.
If any older and wiser minds have pondered this and came up with a workable build, I'd be very interested in hearing about it. In particular, I'd like to know if there is any way to get the Shield bonuses from Stalwart (and the various Shield related feats) to work with the extra AC that you get from Monk levels. If not, then Ftr12/Pal6/???2 would work out just fine. Possibly Rogue for Evasion + UMD. Possibly more Fighter for the extra feat. Possibly still take 2 Monk for Evasion and 2 feats. Maybe Paladin 8 for the extra enhancements.
I also know crapola about serious AC building, so I don't know where to go with that. Any tips for contemplating this build would be appreciated. I have a feeling that the 2 Monk levels won't be worth the trouble that they bring and that Full Plate is the way to go, but I at least wanted to take a look at the idea of a Pajama Fighter/Paladin hate tank. If anyone has a not-horribly-out-of-date AC thread link in the other forums, I'd appreciate it.

Ya, it's a pretty decent class level split. I ran across a fairly decent looking one a week or two ago, I'll dig it up in a sec...
Edit: Hmm, after digging around a bit I can't find where I last saw one of those builds floating around. I might be remembering a discussion from guild chat instead.

Ah, here is the one I was looking at. The split is fine, and there isn't anything too horribly wrong with the feats that can't be fixed by grabbing some other ones. I wouldn't follow it too religiously tho.

I just read that the cat followed up by visiting the dog house later that night, dropping some Willie Pete in on the sleeping dog. #epochsfamiliarFTW

It seems like Epoch never loses his popularity.
