Entirely up to you, but we are just presenting end game gear layouts.
Ultimately the head slot is better used for a GS item OR Epic item.
For a Wizard, there really is nothing in epic to put there (Red Helm but not optimal), so HP item or SP item (whichever you craft 2nd) is what makes sense.
The loss of the Napkin is pretty minor when you consider that you will normally be insta killing or mass holding/web/dance.
For both of those, you will have a +2 DC item/weapon equipped (Upgraded Death's Touch, Eardweller, Inner Sight, Spirit Sight, Epic Diabolist) that would make the Napkin redundant anyway.
So, if you are going to have +45hp , toughness, and Heavy Fort between the Head and Cloak slot, why not add +7con, +5 saves into the mix?
Choices for +7 int are Inner Sight staff (not ideal at all) or Epic Robe/Docent. Put +1 con or int (depending what ToD rings you end up with) and Hvy fort or Toughness on the Epic robe/docent.

Anyway, hope it at least gives you some ideas.
