Seriously though I haven't had a cell phone in the last 10 years and have no clue what I should be looking for, what's your guys preferences and why?

For someone like you I'd recommend a Galaxy S5, little bit older, so it's cheap. It was really popular, so there's a lot of third party support, making it easy to root, it has replaceable batteries and a microSD slot.
I'd like to add to this. If you want a built in stylus like the smart phones of ancient history, the Galaxy Note phones are a good choice. Although, keep in mind they can be a bit big. Like 5.5 inch screen (measured diagonally).
Nice thing about the built in stylus for those phones is that they have a precision tip. Not those big rubbery tips like any standard stylus for a capacitive touch screen.
The styluses have some other real neat features. Like when you hover over the screen with it, the phone can sense that, and treats it like a mouse cursor. One example is that you could use that on website that has those drop down tabs when you hover over them with your mouse. Hovering the stylus will act just like you're hovering a mouse cursor over it.
Note 3 and 4 have a removable battery and Micro SD card slot, so those could be a good choice. Note 5 doesn't have a Micro SD slot or removable battery, but they are bringing the Micro SD card slot back with the Note 7. (They're skipping Note 6)
But yeah, only if you fancy a stylus. Can be a nice tool for certain games.
