Soda is also modestly acidic which is good for carrying some flavor and tenderizing.
I would have braised it with beer, some garlic, cumin and chilis. Shred for tacos, enchiladas, tamales, etc. Freezes well too.
Instant asshole. Just add alcohol.

Man, I hear you. I had the same reaction, but my wife promised it'd be good. She was right, it was pretty fucking good. We used the HEB root beer with cane sugar, and left it in the crockpot all day. That shit fell just apart, and tasted awesome. However, root beer wasn't the only flavor. My wife picked out some spices that would go well with the root beer, and my son made a dry rub out of them to cover the roast with before putting it in the pot.
If you've never tried it, marinating a brisket in Coke before cooking is pretty good too.

Virgils root beer - typically found in mini-kegs. BEST SHIT EVER. Unbelievably good. I only allow myself a couple of kegs a year, as I will polish off the whole thing in under 48 hours.

Dr. Pepper has some good flavors for similar purposes.
Also...
1 warm can soda (cannot be diet, needs to have sugar or HFCS
3 cups flour
1 teaspoon of baking soda
1/2 teaspoon of salt
Mix/knead until it's smooth
Throw it into a preheated oven at 375
The flavors kind of concentrate in the crusts so breaking it into rolls is ideal.
You can do this with energy drinks too. Had a kid get into the Amp rolls at a party once and his dad was not pleased for the next few hours.
You can do a similar thing with beer, but substitute the baking soda with a bit of yeast and sugar. If it's a beer that still has some yeast in it, just some sugar instead of baking soda.

Follow Up:
OK, that shit is good! I can't see me drinking a LOT of it, but it is really complex... I do prefer a more chocolatey root beer, tho - I'll toss some Godiva Liquor in it this weekend and see if that's any good.
