CrapCodeAholics Anonymous suggests you start with something simple and easy enough for even drooling morons to understand - Don't go live with anything that hasn't been in a completely unchanged state on your Release Candidate server (Lamania) for a long enough time period to have a high percentage of code hit.
I'd say at least 2 weeks if you have a decent population on, but maybe 3 or 4 if the changes are big or the population is dissolusioned because your bug reporting tools are crap and bugs have been a low priority for ages.
And of course, having it sit on the RC server isn't enough, you have to actually collect, acknowledge, and act on bug reports. Normally I wouldn't think that last bit had to be explicitly stated, but, you know, Turbine
